I love egg salad sandwiches. Egg salad is such a simple thing to make, so easy with quick and easy ingredients.
How much I make depends on who is eating lunch with me. I prefer to make enough to eat at the time and maybe enough for extra sandwich or two later.
Ingredients:
Eggs
Miracle Whip (Real Mayo works, but I prefer the sweetness of the Miracle Whip)
Salt
Pepper
Bread
Boil the eggs for about 5 minutes to get hard boiled eggs. Once done, rinse under cold water to cool the eggs enough to handle. Crack the egg shells all over and gentle peel the shell and inner membrane off (dry out the shells and use in the garden later).
Put the de-shelled eggs in a bowl and using a fork, mash the eggs. Add salt and pepper to taste.
Use miracle whip to taste. Some days I like it a little more creamy, while other days I prefer it to be tad on the drier side. Standard, I probably use about 3 TBS Miracle Whip to 4 eggs.
You could also add in some sweet relish.. again, to taste.
Toast your bread lightly, spread on some egg salad with a fork and much with a sweet pickle. Enjoy!

One of my favorite dishes is simple and cheap… black beans and rice salad. Rice and beans are a staple I keep on hand, and we almost always have cheese and sour cream.. so when I get in the mood for this, it’s not very costly (just pick up a tomato and avocado). This isn’t one my kids are fond of though. Usually just me & Em.
Ingredients - and layer in bowl in this order:
Shredded Lettuce
Cooked Rice (I like it when it’s still warm off the stove)
Black Beans (I use canned and drain/rinse)
Salsa or Diced Tomatoes
Sour Cream
Mashed Avocado
Top with Shredded Cheese (your choice)
For seasonings, I just use salt (or the No-Salt Salt, since I need to watch my sodium because of my crohn’s disease and presdnisone issues). But you could use chipotle seasoning, red pepper, or whatever suits your buds.

One of our favorite meals around here is Tatertot Casserole.

I’ve posted a similar tatertot casserole recipe at Momma Muse, but realize I tend to do it different here and there.. today I made it for a late lunch, early dinner and here’s how I did it:
Ingredients
1 lb. ground beef, browned and drained
1 bag frozen tatertots
1 can cream of chicken (OR 1 can cream of mushroom)
1 can cheese soup
1 can of milk (one of the soup cans)
8 shredded cheese
8 oz sour cream (optional)
- Heat oven to 400.
- Mix cans of soup and milk.
- Add sour cream, mix.
- Add shredded cheese and ground beef and mix well.
- Pour tatertots into a 9 x 13 baking dish.
- Pour mixture over top and mix as well as able.
- Cook about 35-40 minutes or until casserole is bubbling around edged.
It’s so easy and if your worried about the kids getting veggies, you can hide them in this… a sneaky way would be 1 or 2 cups of pureed veggies mixed in - the kids won’t even see them!

My daughter came home this morning with 2 cans of baked beans and a package of hot dogs. She’s been wanting Beans & Weenies for a week and finally got the makings for it. But she still wasn’t sure what to do.
Beans and Weenies are so easy to make and really are yummmy too!
She bought 2 medium sized cans of baked beans - whatever flavor is good for your buds (taste buds, of course!). We usually get beef franks of some sort, but again.. whatever kind you want, or whatever fits your budget.
Dump your cans of beans into a pot and turn the heat on medium or so… keep and eye on it. Slice your hotdogs into ‘wagon wheels’ and toss those in to the beans. Give a good stir. Add a generous squirt of ketchup and a couple table spoons of brown sugar. Keep and eye on it, stirring often so it doesn’t scortch the beans. Remember, it’s all already cooked, so really you are just heating it up to make it really tasty.
Serve with some buttered slices of bread. Yummmy, cheap and easy.
