Homemade Beef and Noodles
Beef and noodles are tasty on their own, or the way we like to eat them, poured over a bowl of mashed potatoes.
* A small-medium size roast - size will be subjective to your family needs. We like lots of meat, so I usually get a medium roast and use a portion of it for “Butter Bread Roast Sandwiches”.
* A bag of egg noodles - I like the extra wide kind.
* 3-4 bouillon cubes, not required, but I like the flavor to be very rich.
* 1 bay leaf
Serve with:
* Biscuits
* Mashed Potatoes (optional, but yummmy) - either homemade, or there are a few varieties to make it easier now.. microwaveable, etc.
Instructions:
- Sear your roast in a pan with a couple tablespoons of oil on high heat. I usually make mine in a soup pot.
- Add a couple cups of water - don’t cover the roast, but about 3/4 of the way up.
- Add your bouillon cubes and bay leaf.
- Cook for 3-5 hours (depending on beef cut) at about 325 degrees. You want it tender and easy to pull apart with a fork.
- When the roast is done, cook the noodles according to package directions.
- Pull apart roast into bite-sized pieces. Save aside any you don’t want to use for you beef & noodles. Removing any fatty pieces.
- When the noodles are done, drain water off and then add the noodles to the cut beef and beef broth. Mix and chow.
